Recipes I’m loving for January

Harissa Prawn & Chorizo Spaghetti

I’ve finished the cheese and endless amounts of chocolates, the fridges are now clear of the Christmas indulgence, so it’s time to get back to eating well.

I generally have a good diet but I love discovering new recipes. My kitchen shelves are full of cook books and I enjoy collecting them or receiving them as presents. I love trying out new receipes which I can share with my friends & family.

Last year my son bought me Snoop Dog’s From Crook to Cook, hilarious, but I must admit his fried chicken recipe is yummy. This year my son’s gift was more sophisticated and was all about the A to Z of Pasta. Along with the recipes are short essays that weave together the history, culture and the everyday life of pasta shapes from the tip to the toe of Italy. I am looking forward to trying some recipes out soon. I might even try to convince him to make homemade pasta with me. Good luck with that I hear you say !!

In this house you see, my teenagers think I run a restaurant so when I make something new or even a trusted favourite, I feel like I’ve turned into a contestant from Masterchef and all of a sudden John & Greg are judging my food in my kitchen. Let’s just say they are a tough bunch to please. I normally get ‘why do you cook such healthy food’ or ‘Just fry it’ don’t get me wrong I love a bit of fried food but in general I try to keep things healthy. I’m not running a restaurant here team ! Anyway here are a few nice easy recipes I have been cooking this week.

  • 250g cooked prawns

    150g uncooked large deveined prawns

    2 cloves of garlic

    juice of half of lemon

    knob of butter (Kerry gold of course)

    2Tbs Harissa paste

    Half Chorizo

    300g Spaghetti

    Parmasen Cheese

    Fresh Parsley

    Fry the chorizo and garlic in a little olive oil next add the uncooked prawns and cook for 2 mins then add the cooked prawns, squeeze in the lemon juice and add your butter to make a little sauce. At the same time cook your spaghetti. When cooked add the spaghetti to the prawns then add your Harissa with some of the pasta cooking water this will give you a nice silky sauce. Finish off with fresh parsley, and a little parmesan, season to taste ! Yum !

  • I bought some Bio & Me Apple & Cinnamon Oats, and added some lovely fruit, seeds & nuts and it was so yummy and great for your gut.

    50g porridge

    180ml milk of choice

    1 tsp maple syrup

    Fresh Raspberries

    Pomegranate seeds

    Flaked almonds

    Handful of mixed seeds

    Pour your milk and porridge into a microwaveable bowl, stir and cook on high for 2 1/2 mins, remove and stir and leave for 1 min to thicken. Then top with all your lovely toppings or whatever you have around. Remember eat the rainbow so lots of coloured fruit needed. Enjoy !

  • Serves 1

    55g Frozen blueberries

    20g Maple Syrup

    45g self raising flour

    20g vanilla protein powder

    1/4 tsp baking powder

    pinch of salt

    2 medium eggs

    45ml skimmed milk

    1/2 tsp coconut oil

    Put the blueberries into a small pan with the maple syrup and let it do its thing it will go a bit jam like.

    Mix the flour, protein powder, baking powder, eggs & milk in a bowl and mix together. Heat the oil in the pan then cook your pancakes they should puff up nicely. Once cooked pop on a plate and spoon the blueberry mixture over the top. Yum !
